Quesería La Pared

A cheese dairy at La Pared, on the western coast of Fuerteventura, in the municipality of Pájara. It makes queso majorero, the island's protected designation of origin cheese, produced from the milk of the majorera goat. The house has its own shop, so the cheese can be bought at the place where it is made. The setting is the Barranco de la Pared, at the narrow neck that joins the Jandía massif to the rest of the island.

The dairy works at La Pared, on the western side of Fuerteventura and within the municipality of Pájara. Its product is queso majorero, covered by a protected designation of origin and made from the milk of the majorera goat, the breed that has carried livestock farming on the island for centuries. Depending on the ageing and on how the rind is treated, with gofio, paprika or oil, the same cheese takes on a different character, and the shop on site lets visitors buy it where it is produced.

The surroundings explain much about the place. La Pared marks the isthmus where the Jandía massif meets the rest of Fuerteventura, and the name recalls the old wall that once divided the aboriginal territories of Maxorata and Jandía. The nearby coast is open and rough, with sandstone cliffs and a beach fully exposed to the western swell. Anyone travelling this part of the island tends to combine the shoreline with the dry inland slopes where the herds that supply the milk graze.
