In the hamlet of Las Hayas, next to the Garajonay National Park, Casa Efigenia has been feeding people and sharing conversation for more than half a century. Dona Efigenia Borges made famous a traditional Gomeran cuisine, homemade and naturally vegetarian, made with what the land gives: stews, cheese with its sauces, gofio escaldon, almogrote. La Gomera has no guachinches, but it does have home-cooking houses like this, where the recipe passes from one generation to the next. A classic for slowing down and eating for real.
