Salinas de Janubio
The largest salt flats in the Canaries, a protected wetland in Lanzarote where seawater has been turned into salt for over a century and flamingos gather.

The Salinas de Janubio, in the municipality of Yaiza in south-west Lanzarote, are the largest salt works in the Canary Islands. Their construction began in 1895 under Vicente Lleó Benlliure and was completed in the mid-20th century on the site of the former Puerto de Janubio, wiped out by the Timanfaya eruptions. Of their original 440,000 m², around 20% remains in operation today.
Sea salt is still produced by traditional methods, harvested by hand between May and October and without additives or preservatives. The salt pans yield natural sea salt, flor de sal, fine table salt and salts with spices. The surroundings are protected as a Site of Scientific Interest, a Special Protection Area for birds and a Ramsar wetland, and the salt works offer guided visits to learn about the process.
