Wines from extreme landscapes and almost heroic viticulture are attracting growing interest, and volcanic-soil wines, which the talk puts at barely 1 % of the world’s vineyards, have become a category of their own, often surrounded by claims that they preserve the smell or taste of the volcano. Is that really possible? In the Canaries, where soils are 100 % volcanic, every wine would then be perceived as volcanic, yet professional experience shows this does not always happen. The talk asks which factors make a wine be perceived as volcanic and whether that character can emerge in a blind tasting.
The speaker is Rubén Barroso Martínez, gastronome and FPU researcher at the Instituto de Productos Naturales y Agrobiología of the CSIC, with academic direction by Luis Javier Capote Pérez.
